In this rigorous, hands-on class, Melissa Weller conquers one of the best holiday traditions: the Italian sweetbread known as Panettone.
Panettone can be traced back to the Roman Empire, and is a true, unique delight to eat. It is also a multi-day baking adventure. In this class, Melissa will break down the many steps, and walk through them all, from mixing, proofing and baking. Along the way, she will share tips, techniques, and answer questions about panettone and baking in general.
Melissa Weller is one of the world’s most respected bakers. A French Culinary Institute graduate, she trained at Babbo and Sullivan Street Bakery in New York City. She was chef-partner at High Street on Hudson; head baker at Per Se, Bouchon Bakery, and Roberta’s; an owner and founder of Sadelle’s; and the head baker at Walnut Street Café in Philadelphia. Her first book, the critically acclaimed A GOOD BAKE was published in 2020.
This is an intensive, detail-oriented class and a chance to learn from an expert in the field. Some familiarity with basic baking techniques is suggested. It will run up to two hours. Registration is limited.
