Gravitas
This will be an interactive class for all guests as they will get to work hands-on with koji. Following the class, Chef Matt and the Gravitas team will prepare a 3 course lunch that will feature Meats, Vegetables and Sauces that have been prepared using koji, miso, tamari and shoyu.
